波点蛋糕卷
前天做千叶纹蛋糕卷还多下来一些可可面糊,因为千叶纹蛋糕受到老公、女儿的一致好评,现在干劲十足,又做了个波点蛋糕卷。口感虽然不错,可波点被我挤得有点难看。还有抹茶和可可的颜色太接近,做好的成品有点不突出

  • 40克
  • 60克
  • 白砂糖40克
  • 1克
  • 玉米淀粉1小勺
  • 白醋5滴

Steps to make 波点蛋糕卷

  • 1.蛋黄、蛋清分离
  • 2.油和水搅拌均匀
  • 3.加入蛋黄、10克糖搅拌均匀
  • 4.分两次筛入低筋面粉、盐、淀粉的混合物,搅拌到没有颗粒
  • 5.蛋清放入白醋,分3次放糖打发到湿性发泡
  • 6.舀1/3蛋清到蛋黄糊中
  • 7.翻拌均匀
  • 8.再倒回剩下的蛋清中翻拌均匀
  • 9.抹茶粉用适量拌好的面糊翻拌均匀,可可粉也一样,拌好后放入裱花袋
  • 10.裱花袋剪一个小口子,挤在油纸上
  • 11.烤箱预热,160度烤2分钟定型后取出
  • 12.再把面糊倒入烤盘,抹平,震几下,放入烤箱,160度烤20分钟左右
  • 13.底下铺上油纸,取出蛋糕倒扣,趁热撕下上面的油纸
  • 14.再倒扣回来,让波点在底下,面上再盖上撕下的油纸,让它散热
  • 15.等温热时卷起,放入冰箱冷藏1小时,取出切块
