藤椒牛肉月饼
这是一款快手月饼,也是适合新手或者没有时间炒馅的朋友,用现成的馅来做,基本是零失败。今天我用的藤椒牛肉馅,这也是今年网红的一款馅料。找大品牌的馅料买一包,就可以做一盘月饼啦。

  • 面粉80g
  • 转化糖浆60g
  • 花生油20g
  • 枧水1g

Steps to make 藤椒牛肉月饼

  • 1.转化糖浆,花生油,枧水放盆里,充分搅拌到融合。
  • 2.加面粉和成团,饧1--2小时。配方给出的量包起来的难度不大,皮也比较薄。如果想皮更薄,可以皮10克,馅40克。但难度稍大点,不适合新手。
  • 3.藤椒牛肉馅。
  • 4.分成38克的剂子,500克分了13份。
  • 5.面皮分成12克的,共13份。
  • 6.皮捏成片,包入馅。用虎口推的手法包。
  • 7.包好。
  • 8.模具里沾少许熟糯米粉,然后入模成型。
  • 9.全部做好,烤前喷水。
  • 10.烤箱170度预热完成后,入烤箱烤6分钟。
  • 11.六分钟后拿出来刷一层蛋黄液。
  • 12.再烤15分钟即可。
