    Steps to make 肉酿豆腐 。

    • 1.将鲜肉跟香菇分别洗净剁碎。
    • 2.葱、姜、蒜分别切成碎末。
    • 3.将所有材料加白胡椒粉、盐、鸡精、白糖、淀粉、料酒腌制五分钟。
    • 4.另切葱花、姜丝、蒜片备用。
    • 5.干辣椒切碎圈,八角、红油豆瓣备用。
    • 6.豆腐切块,用工具在表面掏一个洞,记住不要掏透。
    • 7.将事先腌制好的肉馅取适量填在里面。
    • 8.油烧至6成热,先将有肉馅的一面略煎。
    • 9.再翻过来煎另一面,翻面的时候用平铲轻点翻,煎好盛出备用。
    • 10.锅内热油爆香花椒、干辣椒,再放入葱、姜、蒜炒香。
    • 11.锅内添水加生抽煮开。
    • 12.水开后将煎好的豆腐有肉馅的一面朝下放入锅内,开中火煮。
    • 13.中火焖至还有一半汤汁的时候将豆腐翻面,汁收尽时即可出锅。
