凉拌烙紫茄
凉拌茄子最常见的做法是蒸熟的,但是这样茄子就会吸收很多水分,用烙的方法能很好的把茄子里的水分烙出来,更好的保留茄子的风味,最重要的是凉拌茄子非常适合没有食欲的夏天和需要减脂的朋友。
很下饭的,一点不输给炸茄子或者油大的茄子,关键是热量低, 还很利口。

Steps to make 凉拌烙紫茄

  • 1.紫茄去蒂,洗净,备用。
  • 2.切成八毫米左右的圆片。
  • 3.放进平底锅里。
  • 4.开小火烙紫茄,我用的是比较厚的铸铁锅,没有放油,用不粘锅最好,烙的时候,用铲子不断轻压茄子片的表面,直到烙到自己喜欢的生熟程度,喜欢吃软的就多烙一会,喜欢茄子夹生的味道就少烙一会。
  • 5.翻面,烙至两面金黄色即可。
  • 6.把烙好的茄子放入盆中,放凉。
  • 7.捣好的蒜泥,备用。
  • 8.切条。
  • 9.放入盆中。
  • 10.倒上蒜泥,滴几滴香油。
  • 11.拌匀即可。
  • 12.装盘即食。
  • 13.利口,下饭菜。
