超级美味烧肉粽
粽子粽子,超级好吃,甜的、咸的、白的、果味的都超级好吃,

  • 黑胡椒粉1/8小勺
  • 老抽一小勺
  • 八角一枚
  • 花椒粉1/2小勺
  • 白寇两小颗

Steps to make 超级美味烧肉粽

  • 1.粽叶开水穿烫3-5min,
  • 2.糯米提前泡发2h,(因为后面还要泡,如果直接包白米粽子,需要泡发4h);咸蛋黄加适量色拉油浸泡,去腥;这里的豆沙一定要是猪油和红糖熬制的,这样包出来的粽子才香,不能用一般的色拉油和白砂糖,
  • 3.热油下八角、草果、白寇、黑胡椒和花椒粉,爆出香味,
  • 4.倒入切成小丁的肉粒,快速翻炒均匀,
  • 5.倒入开水,(一定要是开水),瞬间让味道更加浓郁,
  • 6.加入老抽,
  • 7.盖上盖子小火熬煮15-20min,待水刚刚淹没肉粒即可,加适量盐调味,这时候尝尝味道,肉汁的味道要刚刚好,可以偏淡一点,但一定不能偏咸,
  • 8.把肉汁放凉后,加入浸泡过的糯米,翻拌均匀,继续浸泡,
  • 9.泡到肉汁差不多倍米粒吸收,
  • 10.粽叶一叶一叶的洗净,(粽叶特别脏,一定要好好洗,)
  • 11.取一片粽叶,
  • 12.卷成如图所示的圆锥形,
  • 13.先放少量米,加入蛋黄和豆沙后,
  • 14.加米填满,
  • 15.包起来,捆上绳子即可,(一般只需要图上横着的那条固定就好了,我是为了区分其他味道的粽子,所以多裹了上面两条,)
  • 16.放入清水中浸泡,让米粒把粽子完全撑起来,
  • 17.还包了大黄米的粽子,好吃!
