韭菜春卷
山东煎饼,以前在山东出差的时候吃过几次,  特别是曲阜孔府,孔庙那一带卖这特色煎饼特别多, 好久没吃过了,买些回来解解馋。 这种饼特别薄,虽然没有什么特别的味道, 但很有嚼劲, 很香, 那种的麦香;还可以当春卷皮, 包个小菜吃也不错。



    今天就用它来包点韭菜馅,做个简易的春卷来当早餐。为了让韭菜馅料拌过后不出水,可以加入适量炸好的粉丝放入,这样中间的韭菜馅料就不会出水了。包好的煎饼放入锅中煎至两面金黄,这薄薄的, 脆脆的“韭菜春卷”就完成了,而且是非油炸。 咬上一口,  非常香脆哟。。。

Steps to make 韭菜春卷

  • 1.将锅烧热, 放入适量的油, 加入粉丝炸一下;
  • 2.将炸好的粉丝捞起, 按压成小段;
  • 3.在鸡蛋中放入适量的盐,打散;
  • 4. 在锅中放入适量的油,倒入鸡蛋液;
  • 5. 用筷子迅速的将蛋液划开;
  • 6. 将炒好的鸡蛋放入切好的韭菜末中;
  • 7.加入适量的盐, 胡椒和味精等调味料,再加入适量的橄榄油,搅拌均匀;
  • 8. 最后加入细碎的粉丝末一起搅拌均匀;
  • 9.将山东煎饼平铺在案板上, 一头放入适量的韭菜鸡蛋馅料;
  • 10. 卷起, 后面用剩余的蛋液封起;
  • 11. 锅烧热,微微放点油,将煎饼的连接面朝下
  • 12.煎至金黄后翻面将另一面也煎至金黄;
  • 13.出锅装盘, 酥脆简单的山韭菜春卷就做好了。
