我家的小盆友是卤肉饭的忠粉,差不多每周都要做给她吃。。

  • 猪五花肉300克
  • 香菇几个
  • 洋葱半个
  • 大蒜2瓣
  • 2勺
  • 八角几个
  • 桂皮少许
  • 香叶几片
  • 植物油2勺
  • 生抽2勺
  • 老抽1勺
  • 料酒1勺
  • 十三香1勺
  • 冰糖几块

Steps to make 卤肉饭

  • 1.选肥瘦相间的带皮下五花肉,洗净,切手指粗的条
  • 2.入冷水,煮沸焯一下,沥净水份
  • 3.准备好各种配料
  • 4.热锅热油,下蒜、八角、香叶、桂皮翻炒出香味
  • 5.倒入洋葱,炒至边缘泛黄。台式卤肉饭一般用油葱酥,为了节省时间,直接这样操作也可以,不影响味道
  • 6.下五花肉,翻炒出油,这样肥肉部分不会腻
  • 7.加盐、料酒、生抽、老抽、十三香、冰糖,翻炒均匀
  • 8.加稍多的温水,香菇切片一起放入
  • 9.倒入电压力锅中,选择执行肉类程序。这样能使肥肉部分在更短的时间内熟烂,如果肉不烂,肥肉会腥腻
  • 10.大约30分钟,完成后连汤带肉倒入铁锅中。这时肥肉部分已经入口即化,不用嚼,舌头一压就碎得滑溜溜的了
  • 11.大火收汁,汤汁要留出少许拌饭,也可根据个人喜好搭配焯水的青菜一起吃
  • 12.如果有水煮蛋,放入一起卤至入味即可
