Steps to make 葱爆海螺片

  • 1.鲜活海螺要把壳先砸开,顶部和尖部要先敲开。搞过两次就有经验了,力度要适中,不要把螺肉砸烂了。也可以在市场让摊主帮忙砸好,只取螺肉。
  • 2.砸完,取好的螺肉。
  • 3.葱姜拍碎,加水,挤成葱姜水。
  • 4.海螺肉去除苦胆。用温水清洗,洗去表面粘液。
  • 5.初步切开,左上方是肝脏不能吃,取出。
  • 6.螺肉切片。
  • 7.切的时候,先对半切开,然后按住海螺,片薄片。这一步比较麻烦,但是螺肉片的均匀,是好吃的基础。
  • 8.一点一点的切片。
  • 9.切好以后的螺片,冲水清洗。
  • 10.用手抓去表面粘液。
  • 11.洗好的螺片。
  • 12.倒入葱姜水腌制。
  • 13.加一点盐,留个底味。因为爆炒的时候比较短,所以要先入一点味。
  • 14.准备辣椒,小米辣,香菜。
  • 15.再加葱,都切成段。
  • 16.起锅热油。
  • 17.下入辣椒和葱段,小火煸出香味。
  • 18.把辣椒炒软,大葱炒出香味。
  • 19.倒入螺肉,空出腌制螺肉的葱姜水,但是葱姜可以一起加入。
  • 20.一勺海鲜酱油。
  • 21.一勺盐。
  • 22.一勺糖。
  • 23.开大火爆炒两分钟,出锅即可。
