酱肉烤茄子
俺这个茄子是综合了炸酱面、茄子夹与铁板茄子的混搭,基本上算个四不象,但味道还是很不错滴说!而且最大的优点是——少油!但茄子依然好吃,不过水,茄子不会软烂走形。

  • 圆茄子两个
  • 猪肉150克
  • 红辣椒一个
  • 生姜15克
  • 大蒜15克
  • 色拉油30克
  • 料酒一勺
  • 老抽一小勺
  • 陴县豆瓣一大勺
  • 甜面酱一大勺

Steps to make 酱肉烤茄子

  • 1.将圆茄子洗净切去蒂部、从中间一刀剖成两半,在中间的切面上斜刀打出十字花刀,红辣椒切小丁、生姜大蒜切末。
  • 2.猪肉(肥三瘦七)剁成末。
  • 3.锅内倒少量油,大火烧至八成热,下入姜蒜末煸香,然后下入肉末扒熟。
  • 4.下入红椒丁爆炒、加入盐炒匀,然后倒入料酒,改小火烹香
  • 5.加入老抽、豆瓣酱和甜面酱,加少量水,小火烧5-8分钟,至锅内的水分差不多收干,肉汁变得浓稠时,关火。
  • 6.将茄子切面朝上,将酱肉料均匀的盛放在茄子上,烤箱预热,180度,上下火,20-25分钟即可。
