  • 猪油20g
  • 温水85ml

Steps to make 黑芝麻汤圆

  • 1.黑芝麻放烤箱中160度烤5分钟至出香味即可取出,冷却。
  • 2.倒入搅拌机,打磨成黑芝麻粉。
  • 3.黑芝麻粉中加入砂糖、猪油,混合均匀,入冰箱冷藏一小时以上。
  • 4.取出分成等份,搓成小球。
  • 5.糯米粉中缓缓倒入温水。
  • 6.混合揉成光滑的面团,饧10分钟。
  • 7.将面团揉成长条,分成小剂子。
  • 8.取一个小剂子,在手心揉圆后稍稍拍扁,慢慢用手将面皮捏薄,放入黑芝麻馅,用手的虎口处收口,轻轻揉圆。
  • 9.锅中烧开水,下入汤圆生坯,用炒勺顺锅边搅动推动汤圆转起来,以防粘住锅底,大火煮至汤圆浮起后,转小火,盖上锅盖煮,见开就添些许冷水,继续盖盖儿煮,共添三次冷水,煮至汤圆变大变软即可。
