Steps to make 春饼

  • 1.一半面粉用沸水做成烫面团,晾凉
  • 2.另一半面粉用凉水和成柔软的面团,再和之前的烫面团揉到一起,揉光滑,饧面半小时。用这样的面团烙饼柔软且有韧性
  • 3.饧好的面团搓长条
  • 4.分成一个个小剂子,分成双数,尽量分均匀。
  • 5.把面剂子稍按扁,扬一层薄面
  • 6.刷一层油
  • 7.再按一按,再扬一层薄面
  • 8.再刷一层油
  • 9.取两个面剂子,有油的那面相对
  • 10.立起来,再滚一圈油
  • 11.这样可以保证饼边缘整齐光滑,烙好时也更容易揭开
  • 12.依次做好余下的面剂子
  • 13.取其中一份擀开,最好两面擀,可以让饼薄厚均匀。喜欢薄的透亮的尽量把饼擀大擀薄。我喜欢吃稍微有些厚度的,所以没擀的特别薄
  • 14.平底不粘锅烧热,不用放油,下饼胚,中火煎。面团烫过,很容易熟的
  • 15.待饼变色,有些透亮时,如图,底部就煎好了,翻面
  • 16.煎另一面时可见饼会鼓起
  • 17.两面都煎至虎皮色即可。锅里煎着一张饼时,同时擀另一个面剂子就来得及。
  • 18.煎好的饼可以轻易分开
  • 19.依次做好余下的春饼。做好的春饼用大一点的盆罩住,以免饼暴露在空气中风干变硬
  • 20.准备菜,我家常吃的是芹菜胡萝卜土豆丝
  • 21.绿豆芽炒韭菜也是必不可少
  • 22.另准备好葱丝、甜面酱
  • 23.取一张春饼,抹上一层甜面酱
  • 24.铺一层炒好的菜,再放点儿葱丝,不喜欢吃生葱的可以不加
  • 25.卷起即可
