Steps to make 红焖猪脚黄豆

  • 1.将干黄豆放入大碗中冲洗一下,用凉水浸泡2小时以上至泡发成长圆形的豆。
  • 2.将猪脚剁成块,洗净后用凉水浸泡约20分钟。
  • 3.将猪脚捞出,再冲洗干净,放入煮锅中,倒入适量冷水,放入大料、1小勺料酒,加盖后大火煮开。
  • 4.用勺子撇去浮沫后,继续加盖转中火煮10分钟。
  • 5.葱切长段、姜切大块后用刀背拍一下。
  • 6.将煮过的猪脚捞出,用凉水冲洗至凉,放入高压锅中。再将泡好的黄豆捞出,冲洗干净后也放入高压锅中。再放入葱、姜、干红椒、山楂,加入适量水,水量约没过食材底部即可。点火,大火煮开。
  • 7.炒锅中倒入适量油,油量比平时炒菜时略多些。待油温高后放入白糖,炒至糖完全融化。
  • 8.将炒过的糖连油一起倒入高压锅中。
  • 9.放入适量料酒、老抽、生抽、美极鲜、盐、鸡精。
  • 10.翻炒几下,将食材和调料炒匀。
  • 11.盖上锅盖,扣上响阀。待响阀响后转中火,焖约15分钟,关火。静置约5分钟,打开锅盖。
  • 12.再度开火,收浓汤汁后盛出,撒上些小葱段点缀即可。
