花生芝麻馅月饼
花纹不是很清楚,但味道很好,查了下,主要原因可能是月饼皮中按量来的枧水(食用碱和水调配的1-3的比例)我的水可能放多了,下次继续改进,都是按感觉来的,没有称,所以没有称量,所以不尽完美。

    Steps to make 花生芝麻馅月饼

    • 1.将糖浆、花生油、枧水倒入其中搅拌至乳化状
    • 2.加入面粉搅至无干粉(因为没有称,所以加入面粉要少量多次加)
    • 3.揉成光滑的面团后,用保鲜膜包好放冰箱冷藏静置半小时到1小时(面团的手感柔软度像耳垂的感觉)
    • 4.黑芝麻烤至微黄
    • 5.白芝麻烤至微黄
    • 6.花生也烤好脱去外衣撖碎
    • 7.芝麻和花生加入烤熟的糯米粉搅拌均匀,加入白糖,少量高度酒,加热凉后的植物油,和适量水
    • 8.拌至可以揉成团(如果无法揉成团就继续添加糯米粉)
    • 9.全部分成相同的等份
    • 10.月饼皮按成中间薄然后放入馅料
    • 11.翻过来,饼皮在上
    • 12.用手往下推,推至包住馅的大部分
    • 13.然后翻正回来收口
    • 14.全部做好后,手上沾些糯米粉揉在面团上,用月饼模按出样,烤箱预热后放入180度拷6-8分,凉后搽蛋液继续烤15分即可
