杏仁豆腐的历史可以追溯道三国时期,三国时期有位著名的医生名叫董奉,他医术高明,为当时的百姓治病分文不取,只要求被医好的病人为他种一颗杏树,久而久之,人们为他种的杏树已超过了数十万棵,当地人就称之为“董仙杏林”这也就是很多医院愿意以杏林为名的典故。而杏仁豆腐,就是当地人用这片杏林结出的果实发明的。后来杏仁豆腐传入了宫廷,更成为了满汉全席上一道著名的甜食。

  • 清水240毫升
  • 纯牛奶200毫升
  • 砂糖10克

Steps to make 杏仁豆腐

  • 1.甜杏仁洗净,用开水泡透后去皮。
  • 2.甜杏仁倒入料理机中加200毫升清水磨成浆状,滤去料渣,即得杏仁汁。
  • 3.琼脂放入小碗中,用清水浸泡至软。
  • 4.泡软的琼脂与清水200毫升、冰糖一起倒入锅中,小火加热。
  • 5.煮至琼脂、冰糖完全融化,倒入杏仁浆、牛奶搅匀。
  • 6.继续小火煮至微滚,撇去浮沫。
  • 7.将杏仁浆倒入容器中,稍凉后入冰箱冷藏至凝固。
  • 8.锅中入10克细砂糖后,倒入40毫升冷水煮至完全融化,晾凉入冰箱冷藏。
  • 9.将杏仁豆腐切小块倒入糖水内,浇糖桂花、撒上果丁即可食用。
