手工鱼丸
中国的传统节日——春节是一年中最隆重的节日,今天初三做个手打魚丸,魚寓意年年有余,丸子即团团圆圆,这款手工魚丸洁白如玉、细腻嫩滑、清清爽爽、汤鲜则味美。

  • 巴沙鱼1片
  • 少许
  • 猪油6g
  • 豌豆苗适量(点缀)
  • 鸡精少许

Steps to make 手工鱼丸

  • 1.巴沙鱼洗净去水份,先切成条状。
  • 2.再切成小碎条状态。
  • 3.放入料理机中加入适量料酒,少许水、鸡精搅拌成泥状。
  • 4.鱼泥搅拌完成。
  • 5.取出鱼泥加入适量淀粉,少许水(少加)搅拌均匀。
  • 6.再加入少许料酒去腥搅拌均匀。
  • 7.小勺中是融化的白油(即猪油,亦可放色拉油或玉米油)搅拌均匀。
  • 8.准备半碗水挤丸子时用小勺沾一下水。
  • 9.锅中烧温水约60度,水温不可太高,汤中加入适量盐及鸡精,慢慢汆熟。
  • 10.出锅的成品漂亮,正好准备炒豌豆苗,顺手取下几片点缀一下,丸子洁白如玉,细腻嫩滑、不散不混汤、汤鲜则味美。
