  • 细砂糖40g
  • 玉米油40g
  • 清水40g

Steps to make 果酱小四卷,酸酸甜甜是夏天的味道

  • 1.蛋黄加入10g细砂糖打发至发白,细砂糖融化
  • 2.加入玉米油搅拌均匀
  • 3.加入清水搅拌均匀
  • 4.加入过筛的低粉,用手动打蛋器搅拌均匀
  • 5.蛋白分次加入30g细砂糖
  • 6.打发至偏硬性,提前有小弯钩
  • 7.取1/3蛋白加入到蛋黄糊中,用手动打蛋器由下而上搅拌均匀
  • 8.蛋黄糊倒回蛋白中,用手动打蛋器由下而上搅拌均匀
  • 9.烤盘中垫油纸,把蛋糕糊倒进去,轻震几下
  • 10.放入预热好的烤箱中,中层,上下火180度,18分钟左右
  • 11.出炉后轻震几下,连油纸一齐取出放在网架上,上面虚盖一张新油纸
  • 12.完全凉透后倒扣,撕去蛋糕底部的油纸
  • 13.涂上提子果酱
  • 14.卷起来,用油纸裹着,放冰箱冷藏30分钟
  • 15.晚上做的这个果酱蛋糕卷,所以只能待第二天才能拍照;除了皮皱,口感依然滋润,味道依然香浓
