  • 1.葱切段,姜去皮切片,干红辣椒,八角,花椒准备,郫县豆瓣剁碎。
  • 2.锅中烧水煮猪蹄,去除浮沫,捞出控水。
  • 3.锅中放油炒郫县豆瓣酱,葱姜蒜,干红辣椒八角,花椒出红油。
  • 4.放入焯好的猪蹄,炒匀,均匀上色。
  • 5.放入高压锅,加生抽,料酒,白糖,热水炖2小时。
  • 6.最后起锅,打开高压锅盖,大火收汁。
