大理石纹重乳酪蛋糕

Steps to make 大理石纹重乳酪蛋糕

  • 1.蛋白蛋黄分离,分别装进无水无油的干净盆内。
  • 2.黄油和奶油奶酪装进大碗。
  • 3.隔水加热,并不停搅拌至顺滑无颗粒。
  • 4.搅拌顺滑的奶酪糊中分次加入蛋黄,每加一个蛋黄都要搅拌均匀再加下一个。
  • 5.搅拌顺滑的蛋糊。
  • 6.倒入牛奶。
  • 7.倒入过筛的玉米淀粉
  • 8.搅拌顺滑后备用。
  • 9.蛋白用电动打蛋器打发至粗泡后加入3分之1糖粉。之后再分两次加入剩余糖粉。
  • 10.蛋白打至湿性发泡,提起打蛋器拉出长长的弯钩即可。
  • 11.取少许蛋白加入蛋黄糊中
  • 12.用刮刀上下翻拌的方式拌匀。
  • 13.将蛋黄糊全部倒进蛋白盆中。
  • 14.依旧用上下翻拌的方式翻拌均匀。
  • 15.模具底层铺油纸,将蛋糊倒进模具。
  • 16.震破大气泡。
  • 17.裱花袋中装少许巧克力酱,尖端剪小口。
  • 18.在蛋糊表面划平行的长直线。
  • 19.用竹签顺一个方向划出纹路。
  • 20.烤箱最底层放烤盘,烤盘内装入足量的清水,预热10分钟。第二层放烤架,将模具放烤架上进行架式水浴法。上下火140度烘烤70分钟至蛋糕表面略微金黄即可出炉。
  • 21.烘烤结束后拿出冷却后再脱模。
