  • 料酒1茶匙
  • 鸡蛋1个
  • 胡椒粉少许
  • 菠萝1/4个
  • 红彩椒1/2个
  • 番茄酱3茶匙
  • 白醋1茶匙
  • 干淀粉50克
  • 生抽1茶匙

Steps to make 菠萝古老肉

  • 1.主要食材:猪肉、菠萝、青红椒
  • 2.青红椒切菱形块
  • 3.猪肉切稍厚的大片,切好后用刀背轻轻砸一遍,让肉质变松
  • 4.处理好的猪肉放入碗中,加入少许食盐、胡椒粉、料酒、淀粉抓匀腌渍10分钟
  • 5.腌渍好的肉片中加入半个打散的蛋液再次抓匀
  • 6.抓匀的肉片均匀的裹上一层干淀粉,裹干淀粉的过程中可以把肉片松松的卷起,这样再炸制的过程中可以让肉片外酥里嫩
  • 7.锅中油烧制五六成热 放入裹好淀粉的肉片炸制。炸至定型捞出,锅中油温升至8成热,再次放入肉片复炸至酥脆捞出
  • 8.青红椒也放入热油中冲炸一下快速捞出
  • 9.炸好的青红椒和肉片放一起备用
  • 10.另起锅,放入少许食用油,加入番茄酱、白糖
  • 11.加入少许清水,一勺白醋一勺生抽。
  • 12.小火炒至汤汁浓稠起小泡
  • 13.放入炸好的肉片、青红椒、菠萝片快速翻炒
  • 14.快速翻炒均匀,让汤汁都裹在食材上关火。
