轻乳酪蛋糕
轻乳酪蛋糕--一款让人迷恋的,拥有简单优雅外表和细腻丝滑组织的蛋糕

Steps to make 轻乳酪蛋糕

  • 1.准备好材料:奶油奶酪130g,淡奶油50g,酸奶60g,鸡蛋2个,低筋面粉45g,细砂糖50g,柠檬汁3滴,黄油一小块,铝箔纸一张
  • 2.把奶油奶酪130g,淡奶油50g,酸奶60g放进搅拌机(榨汁机)搅拌到顺滑无颗粒
  • 3.把两颗鸡蛋蛋白和蛋黄分离,搅拌好的奶酪糊倒进大碗里,放入鸡蛋黄,用打蛋器顺着一个方向搅拌均匀
  • 4.把低筋面粉筛进乳酪糊里,用刮刀上下翻搅,搅拌到面粉和奶酪糊完全融合,然后盖上密实盒盖子,或者用保鲜膜封好,放进冰箱冷藏一会
  • 5.我用的是活低的蛋糕模,先用铝箔纸套住蛋糕模低,放进蛋糕模里
  • 6.然后用更大的铝箔纸从下到上包住蛋糕模,在蛋糕底部和内壁均匀涂上室内融化的黄油待用。(因为不同于戚风可以倒扣取出蛋糕,这种方法可以轻松取出乳酪蛋糕)
  • 7.然后开始打鸡蛋白,在鸡蛋白中滴入柠檬汁3滴(因为这次用了酸奶也可以不加柠檬汁打发打发蛋白),用打蛋器开始打至有大泡
  • 8.倒入三分之一的白砂糖,再继续打,打到蛋白已经开始变粘稠,又加入三分之一的白砂糖,继续打
  • 9.蛋白开始出现纹路后,倒入剩余的三分之一白砂糖,最后打发至蛋白提起打蛋器,能拉出尖角就完成,预热烤箱150度
  • 10.从冰箱把乳酪糊拿出来,把三分之一的蛋白倒入乳酪糊,用刮刀上下搅拌均匀
  • 11.再把乳酪糊倒入剩余的蛋白中,上下搅拌均匀
  • 12.提起搅拌均匀的蛋糕糊从高处(30cm)倒入蛋糕模里,拿软刮刀在乳酪表面上轻轻画圆圈可消除乳酪表面的痕迹
  • 13.烤盘放入烤箱最底层,注入3cm的水进烤盘里,倒数第二层,放入网架,再把蛋糕糊放在网架上(如果蛋糕模足够高,可以直接把蛋糕糊放进注有水的烤盘里更方便,更好,烤箱150度70分钟,烤到30分钟后,可以转动蛋糕模180度继续烤(防止烤箱受热不均匀引起蛋糕上色不均匀)
