无油轻乳酪蛋糕
无油版的轻乳酪蛋糕吃起来口感比较扎实,但是因为少了黄油,吃的时候心里的负担是不是也少了一点呢?

  • 奶油奶酪250克
  • 鸡蛋4个
  • 低筋粉45克
  • 玉米淀粉20克
  • 细砂糖60克
  • 柠檬汁2滴

Steps to make 无油轻乳酪蛋糕

  • 1.奶油奶酪放入盆中,隔水加热(60度左右),将奶油奶酪搅打至顺滑。
  • 2.分离蛋清和蛋黄。分次将蛋黄加入到奶酪糊中,每加一次搅匀再加下一次。
  • 3.将低筋粉和玉米淀粉混合筛入到蛋黄奶酪中,呈Z字型拌匀。
  • 4.蛋清中加入柠檬汁,分3次加入细砂糖,打发至硬性发泡。
  • 5.取一半的蛋白霜到奶酪糊中,翻拌均匀。(这个时候可以预热烤箱,180度,往烤盘内加水,放在最底层,烤架放在倒数第二层。)
  • 6.再将奶酪糊倒入蛋白霜中,翻版均匀。
  • 7.将拌好的蛋糕糊倒入烤碗中八分满。
  • 8.将烤箱温度调至160度,上下火,烤70分钟左右。
