巧克力戚风蛋糕
黑巧克力买来做了2次杯子蛋糕,剩下的放冰箱里一直没动,今天有时间来做个巧克力戚风蛋糕。

  • 牛奶50克
  • 细砂糖55克
  • 黑巧克力80克
  • 鸡蛋4个
  • 玉米油45克
  • 白醋数滴

Steps to make 巧克力戚风蛋糕

  • 1.巧克力切成小块隔水融化
  • 2.鸡蛋的蛋清与蛋黄分开,分别放到无水无油的两个容器中
  • 3.蛋黄加入30克细砂糖,用手动打蛋器搅拌均匀
  • 4.加入玉米油和融化的黑巧克力
  • 5.搅拌均匀至顺滑
  • 6.加入牛奶搅拌均匀
  • 7.再加入低筋面粉
  • 8.再次搅拌均匀,搅拌至无颗粒
  • 9.鸡蛋白中滴入几滴白醋,先用慢速打至成粗泡,分3次加入25克细砂糖
  • 10.快速打至出纹路状
  • 11.最后出现小直尖的状态
  • 12.取三分之一的蛋白加入到蛋黄糊中,用刮刀搅拌均匀
  • 13.然后再加入剩余的鸡蛋白,轻轻从底部刮起搅拌均匀
  • 14.蛋白和巧克力糊充分混合
  • 15.将面糊倒入模具,颠几下震出大气泡
  • 16.烤箱预热5分钟,120到130度,上下火,倒数第二层烤45分钟
  • 17.从烤箱中取出蛋糕
  • 18.倒扣晾凉
  • 19.脱模用小刀在蛋糕与模具之间划一圈,然后在底部轻轻推出
  • 20.切开
