台式基础面包
翻出去看了台湾那边的一个美食直播节目,学了一款基础的台式面包
配方按照自己的模具“量身定做”了一下,刚刚好八个量

Details of ingredients

  • 高筋面粉125g
  • 奶粉4g
  • 全蛋液25g
  • 牛奶25g
  • 30g
  • 25g
  • 1g
  • 酵母1g
  • 黄油12g

  • 时间三小时

Steps to make 台式基础面包

  • 1.准备好所需材料,黄油放置室温软化备用
  • 2.将除黄油以外的食材混合揉至面团有弹性,加入软化的黄油,黄油与面团完全融合并拉出薄膜
  • 3.面团滚圆,收口朝下,放入碗中,盖上保鲜膜放置室温温暖处进行发酵
  • 4.发酵好的面团2倍大左右,完成基础发酵
  • 5.将发酵好的面团平均分割成8份,盖上保鲜膜松弛15分钟
  • 6.取一个小面团擀成椭圆
  • 7.翻面,卷起,收口
  • 8.放入烤盘中
  • 9.整形完毕,进行2次发酵,烤箱中放一碗水,开启发酵档
  • 10.烤箱预热170度,中层,上下火20分钟
