香酥难忘---凤梨酥
轻轻咬一口,浓郁的凤梨味立刻融化在口中,特别之处是,甜而不腻,香酥难忘!

凤梨酥由来:
凤梨酥相传最早起源于三国时期,其凤梨闽南话发音又称“旺来”,象征子孙旺旺来的意思,而凤梨亦是台湾人拜拜常用的贡品,取其“旺旺”“旺来”之意,所以在当代台湾婚礼习俗。

  • 低筋面粉80g
  • 鸡蛋30g
  • 奶粉25g
  • 糖粉50g
  • 黄油30g
  • 猪油30g
  • 菠萝500g
  • 冬瓜500g
  • 白糖50g
  • 冰糖50g
  • 2至3g

Steps to make 香酥难忘---凤梨酥

  • 1.菠萝去皮去芯,用淡盐水浸泡半小时之后沥水切成小块;冬瓜去皮去籽,切成小块。
  • 2.将冬瓜、菠萝、白糖、冰糖依次倒入锅中混合,静置半小时之后混合果肉会出水。
  • 3.加入适量水与果肉持平即可,开大火煮沸。
  • 4.转小火煮至冬瓜熟烂。
  • 5.取3/4份的果料用料理机打成蓉状,倒回锅中小火慢慢翻炒。
  • 6.直至果料炒到较干,可以抱团为止;待冷却后均分20g/个搓成球状。
  • 7.将黄油切成小块,与猪油室温下软化。
  • 8.分三次加入糖粉用电动打蛋器打至发白、体积变大。
  • 9.将鸡蛋打匀,分次加入粉盆中,打匀。
  • 10.低筋面粉、奶粉混合,筛入面盆中切拌均匀。
  • 11.揉成表面光泽的面团。
  • 12.将面团分成每份约20g/个,搓成球状。
  • 13.取一份按扁,包入凤梨馅,用手掌搓圆,朝下放置。
  • 14.做出若干生坯。
  • 15.摆入烤盘中,用手轻轻按压,整理成长方块。
  • 16.烤箱预热175度,上下火、中层、烤制15分钟取出。
  • 17.翻面再烤制3-5分钟,上色即可。
