致远去的青春 --- 【炝炒圆白菜】
记得读书时,总是会跟朋友们一块AA到学校外的餐馆里改善伙食,学校边上那条幽幽的小街,一长溜各式各样的小餐馆里都留下了我们当年青春的身影,炝炒圆白菜也是当时我们必点的菜式之一,5元一份,每家师傅都能把这道菜的火候把握得很好,清脆中裹着麻辣,很是符合当时年少奔放、张扬的个性,而我也是从读大学起,从吃这道菜开始逐渐学会了吃辣,并且挚爱至今。

我这次用的是自己熬制的猪油,炒出来的菜透明度极高,看起来很是清脆,吃起来既软又爽口,好吃!现在人们都不怎么吃猪油了,据说是胆固醇会高,不过我觉得动物用植物油烹饪,而植物用动物油烹饪挺好,用植物油来炒青菜,一点油星子都看不着,青菜吃起来也是硬的,感觉像是农药打多了一样,而用猪油来炒就不一样了,吃到嘴里是软的,就跟我妈自己种的不打任何农药的青菜口感一模一样!

  • 1.圆白菜洗净切成丝
  • 2.干辣椒剪小圈、姜切丝、蒜剁碎
  • 3.锅内坐适量油,放入姜、蒜和干辣椒小火炒香
  • 4.倒入圆白菜
  • 5.翻炒至熟后关火,利用锅的余热调入盐和鸡精即可
  • 6.喜欢吃酱油的可以放入半匙酱油,我这个没放
