自制湖南剁辣椒
湖南人吃辣椒谁都知道,汗颜,虽说我也是湖南人,但由于久居北方,不是很能吃辣现在。
湖南人吃辣椒花样多多,当配菜炒肉,炒鸡蛋香辣鲜美;做成剁椒当配菜,剁椒鱼头便是代表。反正做了剁椒放坛子里是湖南人家家户户常有的事。大冬天还能迟到新鲜辣椒的味道,还就数这剁辣椒啦。

Steps to make 自制湖南剁辣椒

  • 1.新上市的嫩姜洗净晾干水分。
  • 2.新鲜红辣椒洗净,晾干水分。
  • 3.大蒜剥皮洗净晾干水分。
  • 4.晾干水分的大蒜切碎末。
  • 5.晾干水分的新鲜姜切小丁。(新上市的嫩姜也可切薄片,俗话说的好:冬吃萝卜,夏吃姜。这是个吃姜的季节;哈哈)
  • 6.晾干水分的新鲜红辣椒切碎。
  • 7.将切好的蒜末、姜、红辣椒放入一大干净无水分的容器中,加入适量盐,白酒搅拌均匀。
  • 8.将拌好的辣椒装入玻璃瓶(或坛)中,用保鲜膜封好,放入冰箱冷藏室或阴凉干燥处保存即可。
