葱油粑粑(灯盏粑粑)
小时候最喜欢跟妈妈去菜场买菜,每次去妈妈就会买一个葱油粑粑(我们老家叫灯盏粑粑)给我吃。炸出来外酥里嫩,香脆软嫩。现在回想起来都会咽口水。
我最喜欢吃的葱油粑粑是双层的,第一遍炸出来薄脆,然后再将炸好的葱油粑粑重新放粉浆里面打个滚,再裹上一层粉浆复炸一遍。

  • 剩米饭1碗
  • 粘米粉100g
  • 糯米粉30g
  • 豆浆粉1包
  • 面粉20g
  • 香葱5根
  • 鸡蛋1只
  • 食用油半锅

Steps to make 葱油粑粑(灯盏粑粑)

  • 1.剩米饭加适量清水浸泡一小时左右。
  • 2.放料理机中打成糊。
  • 3.我喜欢吃有颗粒感些的,所以没有打太细腻。
  • 4.黄豆粉或者豆浆粉用少许温水调匀。
  • 5.加入粘米粉。
  • 6.糯米粉和面粉,加入适量食盐和五香粉。
  • 7.放入葱花。
  • 8.搅拌均匀,静置十分钟左右。
  • 9.热锅加适量食用油烧至八成热,将模具也放油锅中烧热,然后舀一勺面糊放油墩子模具中,将油墩子勺子放入油锅中不要动模具。
  • 10.大概一分钟左右,面糊自动脱模。
  • 11.待表面开始变黄,用筷子在粑粑中间戳个洞,然后转动筷子,让葱油粑粑在油锅中转圈圈。
  • 12.炸至表面酥脆金黄捞出沥干油份。
  • 13.中大火复炸一遍更酥脆。
  • 14.做葱油粑粑的勺子中间有个凸起部分,所以不需要另外在粑粑中间戳洞。
