麻辣小龙虾
从小就吃小龙虾,15岁就开始跟妈妈学做小龙虾,所以对于小龙虾已经有10多年的下厨经验,很多吃过的朋友都认为我做的正宗,所以写个方子给大家看看,共勉!

Details of ingredients

  • 小龙虾2斤
  • 洋葱1个
  • 大蒜4头
  • 小葱3根
  • 半个
  • 小米椒6根(喜欢辣可以多放)
  • 香菜1颗
  • 香叶各2个
  • 桂皮各一个
  • 郫县豆瓣酱2勺
  • 黄酱一勺
  • 一勺
  • 冰糖8颗
  • 黄糖1勺
  • 生抽2勺
  • 白酒一大勺
  • 啤酒1瓶
  • 干辣椒10个

Steps to make 麻辣小龙虾

  • 1.首先收拾小龙虾,如图拿住小龙虾2个钳子,用刷子刷洗干净,没刷前小龙虾有很多泥,所以一定得刷
  • 2.如图刷干净的龙虾
  • 3.刷洗完所有龙虾,然后如图,把泥肠给去除,这样做的好处就是入味更香,而且吃的时候更方便
  • 4.处理完所有小龙虾备用
  • 5.准备所有香料,草果拍碎,这样更入味,我没买草果,所以没放
  • 6.辅料准备好备用,5瓣蒜切片
  • 7.其他蒜全压成泥备用
  • 8.起锅热锅倒油,小火放入香料煸香
  • 9.倒入郫县豆瓣酱炒香
  • 10.倒入小龙虾,开大火,开始爆炒
  • 11.大火翻炒均匀,加入辅料洋葱,蒜片,生姜,干辣椒,继续爆炒
  • 12.翻炒均匀后倒入蒜蓉跟小米椒,加入一瓶啤酒,白酒继续翻炒
  • 13.加入白开水,漫过小龙虾即可,大火烧开
  • 14.原谅我,我是用大柴锅做的,焖煮20分钟,转小火,调入盐,继续大火焖煮稍微再收干些汤汁,就可以出锅了
  • 15.出锅码放好龙虾,放上香菜装饰,撒上少许熟黑芝麻,味道真是棒棒哒
