吉列生蚝
吉列猪扒的“吉列”是cutlet的音译,实际上就是炸猪扒。尽管从外表上看,裹了面皮后油炸的做法非常贴近西餐,但事实上却是正宗的日本食物,只是不是传统意义上的和食而已。
吉列猪扒最早是由葡萄牙人传入日本的,而这一类“日式西餐”被日本人统称为“洋食”,即西餐的烹调方式与和食结合后产生的特殊饮食形态。如今日料中的“吉列”也不再限于各种肉类,传统的“过三关”(面粉/蛋液/面包糠)也适用于更多食材,「吉列生蚝」就是洋食之上的再创新。

Steps to make 吉列生蚝

  • 1.闽正半壳生蚝取肉,洗净后用开水窜烫10秒捞起备用。
  • 2.鸡蛋打好搅拌均匀成蛋液。
  • 3.面粉加1勺盐、1勺白胡椒粉和适量清水,搅拌调和。
  • 4.起锅倒油加热,用筷子放入有小泡程度即可。
  • 5.将生蚝肉先沾面糊,再沾蛋液,最后沾面包糠。
  • 6.放入油锅中炸至面包糠呈金黄色即可捞出装盘。
