  • 料酒3勺
  • 生抽2勺
  • 米醋l勺

Steps to make 麻婆豆腐

  • 1.先将豆腐切成1.5厘米小方块。温水焯一下,里面放2勺盐。牛肉剁丁,青蒜切段,葱姜蒜切末。
  • 2.水开煮l分钟后,将豆腐连水一起倒入盆里,泡一会。
  • 3.勺内多放点油,中小火先炒姜末,再放入牛肉粒煸酥,牛肉粒发红时,盛出一部分干的待用。
  • 4.然后放葱蒜末炒香,加1勺郫县豆瓣,1勺泡椒,1勺豆豉,1勺甜面酱微炒,再撒些辣椒粉,花椒粉之后烹入半大勺料酒,2小勺酱油。加约3大勺水煮沸。
  • 5.之后放入豆腐,晃大勺让汁均匀,咕噜一小会后加2勺白糖,l勺鸡粉中小火烧一会,汁收差不多时改小火,分三次淋淀。
  • 6.待豆腐与汤汁融合后再放1勺米醋,撒上青蒜段,1分钟后就可以盛盘了。
  • 7.盛盘后再均匀撒些花椒粉和之前盛出的牛肉粒即可。
