咖啡的香醇,简单的装饰,绵细的蛋糕中还有香甜核桃的嚼感。这就是这款式蛋糕的特点,这个方子已做过不知多少次了,但每次我都会加点创意在里面偿试用点新的东西,原本的方子是用咖啡加水溶解后使用,这样口感过于苦涩,孩子不喜欢吃,所以就有了这个想法用咖啡饮料做,这次用到的是雀巢咖啡饮料,效果也是没有想到的好,淡淡的咖啡香醇,另外也可以看到蛋糕绵细,核桃是用糖和芝麻经过翻沙炒制的非常香甜这又增加了嚼感,创新总是伴随着惊喜,如你感兴趣的话可以试一下~

  • 细砂糖80克
  • 玉米油50克
  • 雀巢咖啡饮料60克
  • 低筋面粉90克
  • 泡打粉2克
  • 果酱少许
  • 翻沙核桃碎少许
  • 可可粉少许

Steps to make 摩卡戚风卷

  • 1.所有原料,将蛋白、蛋黄分离,面粉和泡打粉过筛备用
  • 2.蛋黄、细砂糖(20克)放入盆中用打蛋器打至乳白色
  • 3.加入玉米油搅拌均匀
  • 4.加入雀巢咖啡饮料搅拌均匀
  • 5.筛入面粉和泡打粉搅拌均匀为咖啡面糊
  • 6.取另一个盆将蛋白打至出泡沫后分次加入剩余砂糖
  • 7.继续打至偏干性发泡
  • 8.取1/3的蛋白液与咖啡面糊搅拌均匀
  • 9.将搅拌均匀的面糊再倒入剩余的蛋白中用橡皮刀切拌均匀成蛋糕糊
  • 10.将蛋糕糊倒入烤盘中,撒翻沙碎核桃,入烤箱180度中层25分钟
  • 11.取出烤箱后立刻倒扣稍放片刻,表面抹少许果酱后卷起
  • 12.将卷好的摩卡戚风卷上撒少许可可粉装饰一下后切片即可
