自制洗面凉皮
炎热的夏天吃不下饭,来碗凉皮,冰凉爽口光滑劲道再配上蒜水油泼辣子太过瘾了。

  • 面粉600g
  • 黄瓜1根
  • 绿豆芽半斤
  • 大蒜1颗
  • 2勺
  • 鸡精1勺
  • 干辣椒面2勺
  • 生抽2勺
  • 凉拌醋4勺
  • 花椒粉1勺
  • 花生油2勺
  • 芝麻香油1勺

Steps to make 自制洗面凉皮

  • 1.面粉里面加一勺盐加温水拌成絮状揉成光滑的面团。
  • 2.里面加一碗清水。
  • 3.用手反复的捏洗,面水变白色将面水倒入一个大盆中。
  • 4.再加水用同样的方法洗。
  • 5.再加半碗水用同样方法洗。
  • 6.洗上五六次等水变清了就剩一块面筋。
  • 7.水来将面筋蒸10分钟左右就可以,晾凉后根据自己的喜好切成块或条。
  • 8.洗好的面水沉淀两个小时。
  • 9.两小时后将上面的黄水倒掉,剩下的面水就可以做凉皮了。
  • 10.锅中烧水,水开后将面锣里面用刷了说一层油放两勺面水。
  • 11.放进锅里大火烧开,凉皮上起大泡就蒸好了。
  • 12.取一大盆,里面加凉水,将蒸好的凉皮放进去凉一下好去。
  • 13.蒸好的凉皮透亮光滑。
  • 14.准备黄瓜丝和焯过水豆芽。
  • 15.大蒜切成末里面加盐,鸡精,花椒粉,辣椒面,锅中烧油油冒烟泼在上面,里面加生抽,香醋,芝麻香油拌匀即可。
  • 16.冰凉爽口,光滑劲道的凉皮加上黄瓜丝、绿豆芽和辣椒蒜水搅拌均匀开吃啦。
