巧克力慕斯蛋糕

  • 全效面粉50g
  • 杏仁粉10g
  • 可可粉5g
  • 橄榄油10g
  • 牛奶125ml
  • 蛋黄1个
  • 白砂糖15g
  • 吉利丁片4g
  • 巧克力80g
  • 搅打奶油100g
  • 可可粉6g
  • 开水60g

Steps to make 巧克力慕斯蛋糕

  • 1.A料中的蛋和糖混合搅打→至表面可画出纹路.
  • 2.筛入A料中的粉类→入橄榄油→拌匀成面糊.
  • 3.倒入模具中→在桌子上顿几下→震出内部大气泡.
  • 4.烤箱预热至170°C→入中层→25分钟→取出冷却至室温→脱模.
  • 5.削去顶端凸起部分→剩余蛋糕体平切成厚度相等的两片.
  • 6.B料混合拌匀→均匀涂抹在蛋糕表面→放入冰箱冷冻室.
  • 7.加热C料中的牛奶至80°C→C料中的蛋黄和白砂糖搅打至颜色发白→倒入牛奶中混合拌匀.
  • 8.C料中的吉利丁片冷水泡软→略攥干水分→入步骤7→搅拌至完全融化.
  • 9.加入巧克力→搅拌至完全融化.
  • 10.C料中的搅打奶油打至硬性发泡→加入步骤9中→拌匀成慕斯糊.
  • 11.取出冷冻室中的蛋糕→一片放入模具底部→倒入一半慕斯糊.
  • 12.放入另一片蛋糕.
  • 13.倒入剩余的慕斯糊.
  • 14.入冰箱冷藏至慕斯糊凝固→取出脱模→以银色糖豆装饰表面.
