Details of ingredients

  • 鸡蛋3颗
  • 色拉油32g
  • 牛奶24g
  • 细砂糖24g(蛋黄)
  • 砂糖48g(蛋清)
  • 抹茶粉10g
  • 柠檬汁5g
  • 低筋面粉50g
  • 慕斯粉50g
  • 纯牛奶100g
  • 打发好的奶油200g
  • 吉利丁片2片

Steps to make 抹茶慕斯

  • 1.蛋糕胚操作步骤 蛋黄蛋白分离
  • 2.色拉油、牛奶、24g细砂糖混合在一起搅拌均匀
  • 3.加入蛋黄搅匀
  • 4.筛入过筛的面粉跟抹茶粉用手动打蛋器搅匀
  • 5.蛋清加48g细砂糖,加入柠檬汁打发至硬性发泡
  • 6.取三分之一蛋白与蛋黄面糊搅拌均匀,再将蛋黄面糊全部倒入剩余的蛋白中搅匀(搅拌的时候要注意手法跟效率哦)
  • 7.搅拌好后倒入模具中
  • 8.烤箱提前预热,上下火170°烘烤20~25分钟
  • 9.蛋糕烤好后取出倒扣待凉、将蛋糕按照磨具的形状切成3片
  • 10.慕斯液操作步骤吉利丁片提前用冰水泡软、牛奶加热后加入吉利丁片搅拌至融化,在加入慕斯粉搅匀待凉。
  • 11.之后加入200g的打发好的奶油搅拌均匀
  • 12.将一层蛋糕片放入模具中,在倒入一层慕斯液,刮平,如此反复3次,最后将蛋糕面用刮刀抹平放入冰箱冷藏一小时以上
  • 13.取出用热毛巾捂一下模具边缘即可脱模,蛋糕面上撒上抹茶粉切块即可食用
