【四川】蚂蚁上树
“蚂蚁上树”是传统川菜之一。这道菜的由来据说与元代剧作家关汉卿笔下的人物窦娥有关。秀才窦天章为上朝应举,在楚州动身前将女儿窦娥给债主蔡婆婆作童养媳。窦娥在蔡家孝顺婆婆,侍候丈夫,日子还算过得去。谁知在她与丈夫成亲后不久,丈夫便患疾而亡,婆婆因此病倒在床。
窦娥用柔弱的肩膀挑起了家庭的重担,她在为婆婆请医求药之余,又想方设法变着花样做些可口的饭菜,为婆婆调养身体,婆婆渐渐地有了好转。只是因坐吃山空,经济紧张起来,窦娥只得硬着头皮去赊账。在肉案前,卖肉的说:"你前两次欠的钱都没有还,今天不能再赊了。"窦娥只得好言相求,卖肉的被缠不过,切了一小块肉给窦娥。
该做饭了,窦娥想,这么点肉能做什么呢?她思索的目光落在了碗柜顶上,那上面有过年时剩下的一小把粉条。窦娥灵机一动,她取下粉条,用开水泡软,又将肉切成末,加葱、姜下锅爆炒,放入酱油、粉条翻炒片刻,最后加青蒜丝、胡椒粉起锅。
躺在床上的婆婆问:"窦娥,你做的什么菜这么香?""是炒粉条。"随着话音,窦娥便将菜端到了床前,婆婆在动筷子之前,发现粉条上有许多黑点子,她咪着老花眼问:"这上面怎么有这么多蚂蚁?"当她知道其中原委,并动筷子尝了一口后,不由得连连夸赞,还说,这道菜干脆就叫"蚂蚁上树"吧!

  • 1.准备食材
  • 2.姜蒜切末,葱切葱花
  • 3.粉丝用开水泡软,捞出剪断,沥干水分
  • 4.锅中放少许油,烧热。放入姜蒜末爆香
  • 5.放入肉末煽炒出油来,调入1勺豆瓣酱,翻炒匀
  • 6.往锅内倒入清水
  • 7.调入白糖、酱油生抽
  • 8.倒入泡软的粉丝
  • 9.翻炒至汤汁收干,撒上葱花炒匀即可
