蚝油洋葱肥牛
洋葱肥牛是我喜欢的一道菜,不需要过多的调料,也不需要复杂的操作,炒一炒就很好吃了。洋葱自带特殊的香气,炒得火大点火小点都能吃。但我更喜欢清脆口感的,还微微带点甜味,与微咸的肉片搭配相得益彰。

炒这道菜不要酱油,要不然就衬托不出洋葱洁白的质感了,如果实在想放,建议放点生抽。而我,最喜欢用蚝油炒这道菜了,咸味、鲜味都有了。

Steps to make 蚝油洋葱肥牛

  • 1.材料准备好:肥牛片、半个洋葱。
  • 2.洋葱切大块,根部切掉,使洋葱片呈散开状。
  • 3.炒锅中倒少许油,油温5、6成热时将洋葱倒入锅中翻炒变软。
  • 4.将洋葱扒拉到锅的一边,另一边再炒少许油,不要等油热,立马儿交肥牛片少量多次放入锅中,交迅速用铲子将肥牛片划散。
  • 5.肥牛片均匀受热,很快就变色了。
  • 6.转小火,倒入大约15克的(本味)蚝油。
  • 7.再撒少许盐,充分混合均匀,使每片肉都蘸裹上蚝油,撒少许绿葱叶增色添香,出锅。
  • 8.蚝油洋葱肥牛,香嫩脆爽解馋下饭!
