  • 酱油10克
  • 料酒10克
  • 60克
  • 3克
  • 湿淀粉100克
  • 300克
  • 花生油1500克

Steps to make 糖醋鲤鱼

  • 1.鲤鱼去麟、内脏、两腮,收拾干净后,沥干水,在鱼身两面隔2.5厘米各斜切一刀(先立切1厘米深,再平切2厘米深),用胡椒粉和少许盐稍腌。
  • 2.酱油、料酒、醋、白糖、盐、水和湿淀粉兑成芡汁,待用。油烧至7成热,将浓的湿淀粉均匀涂在鱼身上,提起鱼尾,先将鱼头入油稍炸。
  • 3.再舀油淋在鱼身上,待淀粉凝固时再把鱼慢慢放入油锅内。
  • 4.待鱼炸至金黄色,捞出控油放入盘中待用。
  • 5.炒锅内留少许油,放入葱花、姜末、蒜末爆香,再倒入调好的芡汁。
  • 6.待芡汁收浓起锅浇在鱼身上即可。
