糖醋水芹酥花生
水芹,俗称“野芹菜”,具有一定药理和治疗价值。水芹菜具有降血压、降血脂的作用。它们的根、茎、叶和籽都可以当药用,故有“厨房里的药物”、“药芹”之称。水芹和香芹、旱芹一样,具有健胃、利尿、净血、调经、降压、镇静等作用。

    到野外采摘水芹一定要注意区分,真正的被称之为野芹的是有毒的。水芹菜和野芹菜最明显的区分标志是杆上有没有茸毛,野芹菜的茎上是毛茸茸的,而水芹菜没有。其次,野芹菜的叶子宽、短一些更像家芹,而水芹菜的叶齿细长茎也细长。

水芹很香,炒食、凉拌很嫩口,清明前后,在郊外野地、田间地头随处可见,注意区分有无毒性就可以采摘了。

    每年的清明回老家,我和妈妈都会摘回一些水芹和嫩艾叶。今年的清明节,我没回老家去祭祖,是妈妈为我带回来了许多水芹和艾叶。呵呵,好开心,又能品尝到来自家乡的野菜啦···

  • 1.准备好水芹。
  • 2.水芹洗净、切段备用。
  • 3.锅中水开,到入水芹。
  • 4.焯烫至颜色翠绿、变软,捞起沥干水分备用。
  • 5.取一大碗,倒入生抽。
  • 6.舀一勺白糖倒入一大碗;加入姜汁醋,调匀。
  • 7.淋入芝麻油。
  • 8.加入红剁椒,调好成味汁。
  • 9.焯熟的水芹倒入味汁中。
  • 10.加入酥花生。
  • 11.拌匀,腌制10分钟即可食用。
