Steps to make 糖醋草鱼

  • 1.把草鱼杀洗干净,剁下鱼头。
  • 2.把鱼尾巴去掉中间的鱼骨,不要切断鱼肉。
  • 3.把鱼肉切下两边的大刺。
  • 4.然后把鱼切成片。
  • 5.把鱼放入盆中,加入盐、料酒、胡椒粉用手抓一抓,放入一个蛋清抓匀。
  • 6.把芝麻入锅中炒熟。
  • 7.入淀粉,使鱼片挂上均匀地粘上淀粉糊。
  • 8.把胡萝卜和生姜削成圆形。
  • 9.锅中入油烧热,先入鱼头和鱼尾巴炸,鱼嘴里要塞入生姜炸,鱼尾巴要立着炸,炸成金黄色,捞出。
  • 10.放入鱼片炸到金黄色捞出。
  • 11.把生姜、葱切碎。
  • 12.锅中入油加入葱和姜末炸香。
  • 13.加入半碗水,放入番茄酱、糖,用勺子搅拌搅拌,再加入水淀粉勾薄芡,放入香油。
  • 14.鱼嘴中放上胡萝卜。把汁淋在鱼上,撒上芝麻。
