Steps to make 叉烧包

  • 1.将肉洗净沥干水分,切成大小均匀的块,加入鱼露,蚝油,生抽,麦芽糖各两勺,红曲粉适量,这些调料大概可以腌750克肉,抓匀腌制12小时以上。
  • 2.取平底锅,铺一张硅油纸,将腌好的肉均匀地放在油纸上。用油纸是因为怕粘锅,如果用不粘锅可以不用。
  • 3.盖上盖子,开中小火,三五分钟翻一次面,直到肉全熟。转大火稍微收汁,汤汁不要收太干。
  • 4.将烤好的肉切小丁,加入烤肉的汤汁拌匀。
  • 5.面粉加水,酵母活成面团,发酵至两倍大,揉匀。
  • 6.搓长条,切剂子,擀成中间厚边缘薄的面片。
  • 7.包入适量馅。
  • 8.收口。
  • 9.间隔开放入蒸笼,蒸笼铺上硅胶垫或油纸。
  • 10.二次醒发20分钟,开水上锅,有蒸汽冒出后,蒸12分钟左右。
