老是听说土匪鸡,还真的想起了以前的电视剧《乌龙山剿匪记》,笔者想,所谓土匪鸡,估计是大块肉大碗酒的风格,味道比较浓重,所以,就把鸡剁成比较大块头、下重料来做啦,别说,还真的很下饭的哦。说明一下,这种做法,比较适合冰冻大鸡和饲料大种鸡,一般新鲜的鸡是根本不要用大料(八角)的,用大料和花椒主要是为了劈去腥味。

  • 蒜末1大匙
  • 红萝卜片75克
  • 西芹150克
  • 生抽2大匙
  • 黑椒粉1/2大匙
  • 红糖粉1大匙
  • 精盐1/2小匙
  • 白酒2大匙
  • 花椒2小匙
  • 八角1朵
  • 桂皮1手指
  • 干辣椒2枚
  • 小茴香2小匙
  • 八角1朵
  • 香叶3片
  • 陈皮1块
  • 生抽2大匙
  • 老抽1大匙
  • 胡椒粉1小匙
  • 红糖粉1/2大匙
  • 白酒1大匙
  • 辣椒屑1/2大匙

Steps to make 土匪鸡

  • 1.把鸡治净吸干水剁成块儿,加入生抽2大匙、黑椒粉1/2大匙、红糖粉1大匙、精盐1/2小匙、白酒2大匙,用手拌匀。
  • 2.把八角1朵拍碎,再加花椒2小匙,再拌匀,静置约30分钟,如果不急着烹调,放隔夜更加入味。
  • 3.红萝卜切片、西芹切块、生姜切片、蒜头剁末、红葱头切片、准备好桂皮1手指、干辣椒2枚、小茴香2小匙、八角1朵、香叶3片、陈皮1块。
  • 4.开锅升中大火,放底油,倒入鸡块煸干水,盛起备用。
  • 5.再开锅,中大火,放底油,加桂皮1手指、干辣椒2枚、小茴香2小匙、八角1朵、香叶3片、陈皮1块、姜片和红葱头,爆香,再放蒜末,再爆片刻。
  • 6.倒入鸡块,稍翻几下,加生抽2大匙、老抽1大匙、胡椒粉1小匙、红糖粉1/2大匙、白酒1大匙、辣椒屑1/2大匙、清水深约材料的一半,再翻拌。
  • 7.盖锅盖,汁烧开后转中小火,焖约20分钟。
  • 8.时间到后加入红萝卜片,翻几下。
  • 9.大火收汁,加入芹菜块,兜几下,搞掂!Enjoy !
