台式卤肉饭

Steps to make 台式卤肉饭

  • 1.备菜
  • 2.锅中放肉和冷水,水没过肉,水烧开煮5分钟。
  • 3.香菇用温水泡软洗净切小丁;白干切成小丁;过完水的五花肉洗净切小丁;葱切葱花,姜切片。
  • 4.鸡蛋用煮蛋器煮熟,剥去外壳备用。
  • 5.锅中放油,油热放入葱花,姜片,大料炒出香味。
  • 6.放入肉丁翻炒,放炒至肉出油,表面微黄。
  • 7.放入两汤勺料酒,2茶匙老抽,盐,糖,放入香菇,白干一切煸炒均匀。
  • 8.放入足量的水,大火煮开,转中小火烧30分钟。
  • 9.放入鸡蛋,再煮15分钟,其中翻炒几次,让鸡蛋均匀挂上汤色。
  • 10.汤汁收浓后,将做好的卤肉浇到米饭上,将煮好鸡蛋切开上盘即大功告成。
