乌米圆子
乌米饭,又名阿弥饭、青饭精。大部分地区都在农历四月初八, 多有人家用乌饭树叶煮乌米饭,已成习俗,也有的在立夏或是清明时节。但我们这里的人总是没到四月初八就急着吃乌米饭了。乌米饭油亮清香,由糯米泡入乌树叶中几小时后煮成的。吃乌米饭可以祛风解毒。包了咸蛋黄的肉圆滚上乌米汁浸泡过的糯米,蒸10分钟,清香四溢的乌米圆子就出锅啦!

Steps to make 乌米圆子

  • 1.糯米洗净,用乌米汁浸泡4小时以上,天气热的话放入冰箱冷藏浸泡。
  • 2.浸泡过的糯米沥干水分备用。
  • 3.咸蛋黄取出备用(我用的真空包装咸鸭蛋,口感有点欠缺,建议用新鲜的咸鸭蛋黄比较好)
  • 4.肉末里放入盐,料酒,小葱末,姜按顺时针方向拌匀,取一点肉末,包上咸蛋黄。
  • 5.把包上咸蛋黄的肉圆揉圆。
  • 6.均匀的裹上经过浸泡乌米汁的糯米,用手轻轻按压表面,使糯米不易脱落。
  • 7.做好的乌米圆子放入盆子中。
  • 8.蒸锅中放水,大火煮开后,放入乌米圆子蒸12-15分钟即可。
  • 9.香喷喷的乌米圆子出锅啦!
