闽南的特色面条----【肉羹鲜虾卤生面】
生面---闽南地区的一款特色面条,是当地人们十分喜欢的食物。生面,顾名思义,是现做的、生的,(不是干面条),有带羹不带羹两种之分,带羹的,煮好以后汤汁比较浓绸,所以一般都是卤面的多。抛开卫生不谈,夜宵摊上的卤生面真是五花八门,什么味的都有,肉丝面、牛肉面、海鲜面.....,每一个味道都十分的诱人。
这是上个星期六的早餐之一,双休日,一觉睡到自然醒,然后悠哉悠哉的做一顿美美的早饭,这样的日子真是好轻松。

  • 鲜虾150克
  • 香葱1根
  • 食盐2茶勺
  • 生抽1汤勺
  • 料酒1/2汤勺

Steps to make 闽南的特色面条----【肉羹鲜虾卤生面】

  • 1.准备好生面。
  • 2.准备好新鲜的猪肉、活虾、青菜。
  • 3.先腌制瘦肉,把肉切成较小的薄片,放入碗中。
  • 4.调入少许葱姜水、1汤勺生抽、1汤勺料酒,抓匀后加入适量地瓜粉。
  • 5.再次抓匀,腌制片刻。(不用加水)
  • 6.虾洗净,挑去虾肠。
  • 7.起锅热油,加入两片生姜煸香,下入虾煎炒至熟,出锅备用,虾油留于锅中。
  • 8.加入适量水烧开,水开以后先一片片的下入腌好的肉片煮开锅,接着下入面条,调入2茶勺的食盐。
  • 9.煮开后继续煮约5分钟至面条软烂,下入洗净择好的青菜和虾。
  • 10.煮越1分钟,调入少许鸡精,拌匀,即可关火。
  • 11.剩入碗中,撒上一些香葱末,更香。
