Steps to make 口水凉粉

  • 1.豌豆粉用150克凉水化开,搅拌均匀。喜欢软一点的,水量可以增加到200克。
  • 2.剩下的400克水倒入锅中烧开,倒入搅拌好的豌豆粉浆,一边倒一边用木铲快速搅拌,搅拌至粉浆全部变的透明,再煮2分钟左右。
  • 3.将煮好的豌豆粉倒入碗中,冷却,凉透。
  • 4.调料汁:葱洗净,切成葱花,花生炒熟或烤熟,去皮,用刀或擀面杖稍微压碎。花生用量小,我买的是熟花生剥出来一些。
  • 5.生姜和大蒜,切碎末,放入小碗中。
  • 6.加入一小勺油豆豉(豆豉切碎,加入姜末,花椒粉,放入油里,小火熬出香味)。没有油豆豉,直接用豆豉也可以,把豆豉切碎即可。
  • 7.加入一汤匙生抽。
  • 8.加入糖。
  • 9.加入盐。
  • 10.加入花椒粉。
  • 11.加入一汤匙香醋,将调料汁搅拌均匀。
  • 12.将冷却好的凉粉,用专用工具刮成丝。也可以用刨丝器刮,或者切细条。
  • 13.将凉粉丝放入盘子中。
  • 14.将拌好的调料汁淋在凉粉上。
  • 15.调入适量辣椒油。
  • 16.最后,撒上葱花和花生碎即可。
