Steps to make 手撕鸡

  • 1.鲜鸡腿冷水下锅,加花椒粒、姜片、料酒煮十五分钟。
  • 2.待鸡腿熟后放入加了冰块的凉白开水中冰镇十分钟,这样鸡皮会变得有弹性,鸡肉也不柴,口感软嫩。
  • 3.冰好后可以用保鲜膜包好放入冰箱冷藏,也可以开始用手撕成小块。
  • 4.准备好蒜蓉辣椒、咸水柠檬切碎备用。
  • 5.锅中加入少许山茶油,放入蒜泥爆香,加入蚝油、陈醋、白糖、生抽、咸柠檬即可出锅。
  • 6.鸡腿撕成小块备用。
  • 7.花生放入微波炉大火2分钟,去皮捣碎备用。
  • 8.加入调好的酱汁、花生碎、熟芝麻粒、香菜拌均匀即可。
