高大上宴客级菜品【大虾伴番茄酱沙律】
今天和大家分享一道炸酿大虾的菜式,美味程度媲美西餐厅的高级大菜。潮汕果肉传统做法是豆腐膜包马蹄、肉沫、香菇、鲜虾等馅料,卷成长条,切成小段后入油锅稍煎炸,这次改良下用猪网油包着酿了猪肉的大虾来炸,入口好香脆,配上番茄沙律,混合一起搭配,馅鲜饱满,余味无穷,也可以作为高大上宴客级菜品之一。

  • 罗勒叶少许
  • 薄荷叶少许
  • 生粉50克

  • 1.准备材料
  • 2.用盐水泡猪网油五分钟
  • 3.把杂质去除,用剪刀剪成若干长方形
  • 4.西红柿、干葱、罗勒叶、薄荷叶切碎
  • 5.西红柿、干葱及罗勒叶拌匀后,下少许盐、黑椒碎、橄榄油及亨氏番茄酱调味,待用。
  • 6.大虾开边
  • 7.剔除黑虾丝
  • 8.大虾备用
  • 9.肉碎及薄荷叶捞匀,下盐及黑椒碎调味
  • 10.猪网油铺放在开边大虾上
  • 11.包好大虾
  • 12.大虾包好后,均匀地蘸上生粉
  • 13.用 180℃热油将大虾炸 4分钟,捞起沥干油分
  • 14.伴番茄酱沙律享用。
