葡式蛋挞
葡挞,女儿最爱的点心。
自从女儿上学后,鱼总喜欢在接她们放学时带上一些小点心,一来可以让小家伙们开心开心,二来可以填一下肚子,因为鱼家的晚餐时间比较晚,这样就不用饿着肚子等吃饭。
鱼比较懒,挞皮用的是飞饼皮,鱼把飞饼皮擀的薄薄的,卷了好几层,做出挞皮效果竟然非常好,层次分明,口感非常的酥脆。

  • 飞饼皮4张
  • 淡奶油140克
  • 牛奶140克
  • 白砂糖30克
  • 炼奶1汤匙
  • 蛋黄4个

Steps to make 葡式蛋挞

  • 1.把所有材料准备好。
  • 2.先制作挞水,把牛奶倒入小锅中,加入白砂糖。
  • 3.加入淡奶油,并轻轻搅拌均匀。
  • 4.加入炼奶,搅拌均匀。
  • 5.中小火加热,边加热边搅拌,直至砂糖溶解后熄火。
  • 6.冷却至不烫手后加入蛋黄,搅拌均匀。
  • 7.再用细小的滤网过滤两次。
  • 8.放置一旁备用。
  • 9.飞饼皮提前取出解冻。
  • 10.在案板上洒点面粉,把解冻后的飞饼皮两片重叠在一起,并用擀面杖将飞饼皮擀成长方形。
  • 11.由上至下卷起来。
  • 12.用保鲜膜包好,放入冰箱冷藏10分钟。
  • 13.取出飞饼皮,一条分割为12等份的面团,用手轻轻压一下面团,重叠在一起。
  • 14.再用擀面杖把重叠在一起的面团擀成圆面片。
  • 15.放进模具中,用大母指轻轻按一下底部(底部要薄才会酥)然后沿着模具边缘捏一圈。
  • 16.捏好后的挞皮静置松弛20分钟,加入7成满挞水。
  • 17.送入预热好的烤箱下层,200度,20分钟,烤至蛋挞水表面出现焦点即可。
  • 18.挞皮放入模具时,一定要用大母指按一下底部,因为要薄薄的底部会才会酥脆。
