端午节不仅仅是包棕子,鸡蛋也同样是端午节的重要食品,普通煮鸡蛋每日必食,今天先包了红枣棕子,並煮了卤蛋。卤蛋是用调料加工的熟制品,也是大众化食品。颜色美观红亮,味醇香浓、咸淡适宜、口感韧弹、百吃不厌。

Steps to make 端午卤蛋

  • 1.将鸡蛋洗干净备用。
  • 2.冷水放入锅中,放适量盐小火煮10分钟(放盐煮鸡蛋不易裂)。
  • 3.过几次凉水,很容易剥去外皮,并且完整。
  • 4.锅中水烧开放入2个八角,适量花椒粒煮出调料味。
  • 5.碗中加入4勺生抽,2勺老抽。
  • 6.将生抽老抽倒入锅中,再加适量的水、盐。
  • 7.放入去皮的鸡蛋煮制。
  • 8.红曲米适量,冰糖适量放入锅中煮制。
  • 9.这是将锅中的渣料捞出后再煮5分钟收汁。
  • 10.从锅中捞出卤蛋,汤汁倒入盆中。
  • 11.成品卤蛋制作完成,颜色红亮诱人,味醇香浓、咸淡适宜、口感韧弹、百吃不厌。
