轻乳酪蛋糕

  • 柠檬汁几滴
  • 黄油60g
  • 蛋黄10个

Steps to make 轻乳酪蛋糕

  • 1.取一平底锅,锅内加入适量的水,另取一个不锈钢碗,将奶油奶酪和牛奶放进去,隔水加热,将奶油奶酪和牛奶搅拌均匀至光滑无颗粒。
  • 2.再将黄油加入奶油奶酪中,搅拌至黄油溶化,搅拌均匀至看不到油星。
  • 3.将关掉电磁炉火力,分次加入三个蛋黄搅拌均匀。
  • 4.再将低筋面粉筛入,并搅拌至无干粉的细腻蛋黄糊。
  • 5.5个蛋清加入1小勺柠檬汁;烤盘内加水放入烤盘,开始预热。
  • 6.80g糖分3次加入蛋清里,打至湿性发泡状态即可。
  • 7.打好的蛋清取1/3加入蛋黄糊中,切拌均匀;搅拌均匀的蛋黄糊倒回蛋白中搅拌均匀。
  • 8.倒入8寸蛋糕模具,抹平,震去较大的气泡。
  • 9.放入预热好的烤箱,水浴法,上下火中层,140度烤30分钟,后170度烘烤30分钟,共烤60分钟。
  • 10.取出烤好的轻乳酪芝士蛋糕,放凉后放入冰箱内冷藏6个小时!
